Thom Dolder shows how he made a walk-in cooler to hang beef, game meat, pork. It makes a great root cellar or curing chamber to hang and age ham or bacon. The insulated cargo container was used, a new 15,000 BTU air conditioner and Coolbot were purchased. The cost of the unit was about one third that of a regular walk-in cooler. Great for home small farm foods.

    Such a great idea to age beef! My husband would love this idea. On the root cellar part how does it do during the winter time? Does it get super cold where you live? We live in southern Canada where the winters get -35 degrees Celsius or colder. Does the insulation protect the produce from freezing? Thanks!
