Owner Dan Oboyle guides us through an installation of a commercial kitchen exhaust system at a restaurant called TreMonte. The previous exhaust system was 15 years old, the newer system is larger and has dual openings. Old exhaust systems cause bad air for the employees and the patrons.     Really good video and description of how it all works. I wish the kitchens ive worked in previously had the same efficiency. We had a Major draft because of the vent hoods. Good to know that can be avoided and should be avoided.
